Potato Leek Soup

Recipe:

1 red onion

2 tbsp minced garlic

3 Leeks sliced (use the greens)

4 medium size potatoes diced

32oz chicken broth

2 cups cream

1 package shredded sharp chedder

Salt and pepper to taste


Instructions:

In a soup pot sautee the leeks and onions and garlic until the become translucent. Add the remaining ingredients minus the cheese. Bring to a boil while stirring occasionally. I lowered mine to a Low heat setting because my pot was smaller to prevent over flow. Let the soup simmer for 30 to 45 minutes until the potatoes are done. Stir occasionally and sample to decide if you need more salt and pepper. Towards the end of the time add the cheese and stir until its melted.


Variations:

You could add celery and carrot with the onions and saute for an additional flavor profile. Also brocoli would be a fun addition as well!
