Spring Rolls

Here is what I did to make these yummy spring rolls. This is mostly prep work with the exception of boiling the noodles. But they do have teady to eat noodle options as well! Spring rolls are easy to customize so pick and choose what you want to use! Also I found all of my ingredients at Walmart, but if you have an oriental grocery store they might have more fun options available.


Recipe:

1 package Rice Paper(contained 16 papers)

1 package medium cooked shrimp (41-60 pkg)

1 box Thai kitchen rice noodles

1 bundle fresh cilantro

2 carrots peeled and thinly sliced

1 to 2 cups thinly sliced red cabbaged

3 sliced green onions

Optional:

1 bundle fresh mint

1 thinly slice cucumber


Hoisin Peanut Butter Sauce

3/4 cup Hoisin sauce

2 Tbsp Peanut Butter

1 tsp minced garlic

2 tbsp water

1 tsp soy sauce(to taste)

1 tbsp diced green onion

Optional:

Use crunchy peanut butter or add 2 tbsp toasted chopped peanuts


Instructions:

1. First to make the sauce add all the liquids and peanut butter to a bowl and whisk until combined. I added water untill I liked the consistency and make sure to taste because you can always add more hoisin or PB. Once sauce is combine add the garlic, onion, and peanuts if using. Put sauce in refrigerator until ready to use. Could be made the day before and stored in an airtight container.


2. Prepare noodles according to the box instructions. Once they are ready strain and cool.


3. Prep all your veggies and if your shrimp has tails remove them as well. I used 3 shrimp per roll. So if you know how many rolls your going to make you can be prepared and count out your shrimp at this time.


4. Once all of your veggies and noodles are prepped it's time to assemble. It's almost like your making a burrito because you just pick and choose what you want in the roll. Use small amounts so that you can still roll and not break the paper. Follow the instructions on the rice paper package to prepare them. It takes about 10 seconds in warm water. Place the paper on a cutting board or plate and top with ingredients. Place them in a small pile towards the middle of the paper. Then fold the bottom over the ingredients, then the sides, and then roll over the remain paper until you have a yummy spring roll.


That's really it roll roll roll until your out of ingredients! I also scooped some of the sauce into my rolls to make it easy for my kids, but that's optional. It might take you one or two to figure out how much can go into each paper. Stick with it though and you will have an awesome treat afterwards!Share with me any variations that you make of these yummy treats!
